I am dead on my feet after the fabulously fun 10-10-10 event today, so this is my kind of crafting right now–couple clicks here, couple clicks there, and voila! An adorable page showcasing my two favorite women. This is my baby girl and my mom making pumpkin muffins this summer. Preciously sweet!
The color scheme was easy to pink–just combine the pink pajamas and the black and white of my mom's cow-themed kitchen. I love that with My Digital Studio, if I wanted to, I could make the photos black and white with just a click. I maybe will go back and try that–after all, if I don't like it, I can erase it with another single click, right? No worries! I see I also need to "nudge" my photo corner punch down a hair, too.
Well, I promised you a recipe now and again and I think I haven't posted once since the Pampered Chef Brownie Truffle Lollipops and the Oreo White Chocolate Wedding Truffles last fall! Here's the pumpkin muffins recipe that my extended family uses constantly:

Easy Pumpkin Muffins
1 spice, carrot cake, or chocolate cake mix
mixed with
1 regular size can of pumpkin.
Bake at 350 degrees for 20 minutes.
That's it! Enjoy–but don't eat too many at once–pumpkin apparently has a LOT of fiber. You'll want to keep these out of reach and ration them to the kiddos. And try them with cream cheese frosting sometime–absolutely scrumptious!

Oooh, I just had an idea. I will add the recipe to this page, too, when I go back in to fix it up. How cool will that be? Happy Scrappin!

  1. Be sure you use the LARGE can of pumpkin and make it REAL pumpkin, not pumpkin pie filling (which is mixed with spicies, etc)
    And we love using the mini-muffin baking sheet – no waste (ONE bite for dad, sized for little hands, too)

  2. One egg makes the batter easier to work with. Mom said we use the large can of pumpkin because we use TWO cake mixes.
    So use a regular can if you only use one mix.
    Nothing else (no water, no oil, etc)
